I know from long time ago that usually it is explained that cooking makes what we may eat more yang, and that raw food like fruits are ying. However, suddenly I have come to understand that such view may be mistaken, it has been when I have realized that life is yang, whilst death is ying.
After many years eating cooked food one may develop a cancer and many other degenerative diseases, disease is a ying process as it may lead to death, still more chronic diseases are considered ying diseases. There may be yang diseases and ying diseases. Actually a disease may have ying aspects and yang aspects. For example, cancer has yang aspects and ying aspects, in cancer that the body has become acid what is yang, in cancer the body has a deficiency in oxygen, what is a deficiency in ying, in cancer the body has a lower temperature, what is ying, and in cancer cells suffer the tissue damage syndrome that is an excess of sodium and water in cells with a lose of structure in cell's water, an edema is ying, however, if it is probably caused by a long time excess of sodium over potassium in diet, this salt in diet is yang. Yet, diseases may be as a whole considered ying.
Now, if cooked foods may promote ying diseases it may be that cooked food either is ying or is extremely yang. However, degenerative diseases may be reverted by eating raw and living foods -fresh juices of fruit and green vegetables, fruits, green vegetables, other vegetables, sprouted seeds, raw fermented foods. Therefore, only if these foods that have vital energy are considered as a whole yang foods, it may be understood that they move a body with a disease to self heal. Because yang may balance excess ying. Actually, raw foods may be considered to have two yang qualities, it is yang that raw foods use to be more acid, be aware to do not confuse the pH of the food with its transformation in the body, raw foods use to be alkalizing for the body, however, they themselves use to be acid, sour or tart; and it is yang that raw foods have vital energy, raw foods are active because they still have biological activity within them; the only ying aspect, if it is so, is that raw foods are cold or better raw foods have to be eaten a no more than 43C (109F).
One may think that fruits are sweet therefore they are ying, this is right, however, the same fruit after cooked not only decays in its components and nutritional value, which is a ying process caused by a extreme yang heat, but it gets its sweetness concentrated, therefore, with in this aspect the cooked fruit is more ying than the raw fruit. Only if you eat the cooked fruit when still hot is when you may say that it is more "yang", however, this is a false nutritional yang. If you make a juice with the fruit, it has a similar effect than cooked, only that juicing is a much milder yang process than boiling or frying, juicing concentrates nutrients by separating fiber from them and if eaten fresh it may be considered a super-food or a medicine.
The light of the sun is yang, the water of the rain and rivers is ying, both together are taken by bodies to live and grow, what is as a whole a yang process. The heat of cooking is yang and the water or the oil of cooking is ying, both together are taken by bodies to die and get destroyed, becoming more alkaline, what is as a whole a ying process. The more yang cooking is the more ying becomes food, because the destruction of vital energies or nutrients is bigger and because its pH increases. Raw food use to have a lower pH, it is more acid, there fore it is more yang. The effect of eating raw food use to be alkalizing, the effect of eating food heated above 43C (109F) is acidifying. Raw or living food may be harder to eat because you have to chew it, however it is easier to digest, cooked food becomes easier to swallow but it is harder to digest. Chewing living food helps to extract its tastes, however cooking with heat extracts taste from food and makes chewing less interesting. Eating living food makes feel lighter, and eating cooked foods makes feel heavier.
Considering a comparison with air.
Fresh open air may be full of vital energy -it has more oxygen, it has more negative ions, it is more clean- it has a lively yang condition even think it may be cold, whilst the closed air of a building lacks of vital energy -it has carbon dioxide, it has more positive ions, it is contaminated by dust and products of cleaning- it has a dying ying condition even think it may be warm. It may seem than positive should be considered yang and negative ying, however, electrons because their high speed may be yang whilst protons because they are massive may be ying, also an excess of electrons gives an acidic pH, or an excess of protons gives an alkaline pH (one may be tricked by words). To a person with a disease it would not be recommended to breath inside, but to breath outside doors. It may make sense to help preserve the body temperature by different yang means, however, dusty and toxic air does not help at all, it is not life yang, but if it is warm, is just hot yang.
Akin to this, it makes no sense as well, to use food to preserve body temperature by in-taking over heated food, hot yang, because it is dead or decayed food, from the point of view of life this food is ying not yang food. Raw living food warms the body in a way that heat can not do, it warms up life, it does not broke the link of life with sun light and rain water. Raw or living food has proteins, carbohydrates, fats, vitamins, antioxidants, enzymes, minerals and other nutrients and qualities that science has not discovered yet, as well as microbial life and flavors. All this are parts of its vital energy. Raw food has enzymes that digest food as well as bacteria and yeast that help digesting it and enrich it with new nutrients, raw food digests itself and grows life, it "warms" yang the body. However, food destroyed with fire lacks of enzymes and microbial life so that all the effort of digesting it has to be done by the body, the body has to produce enzymes and other substances and these enzymes and substances alone have to transform this impoverished food into something nutritive for the body, as the body has to use extra energy to do this, it is loosing it, so that the body gets "colder" ying.
If a certain raw plants has some kind of toxic component, that component may be destroyed by heat if cooked, however: Does eating it have any sense at all? and: Are there other means to destroy the toxins and make it edible, as for example, sprouting in the case of grains or fermenting it by a proper bacteria of yeast after cooking it in the case of other food? Fermenting may be an interesting manner of reviving cooked food, as bacteria produce enzymes, vitamins and other changes in food.
In some view, the ying yang system of understanding food and all other things, may have to taken in a relative manner. For example, female is yang, male is ying, it may be because mammal females use to have less muscular strength, however, not all species are thus, female spiders and female praying mantis are physically stronger, so, actually, having muscular strength is not linked with males as such, it just happens to tend to be so in mammals. For example, the earth is ying, the sun is yang, it may be that the earth is ying because the earth seems to not move, whilst the sun seems to be moving, however, actually, the earth moves more than the sun, it is the sun what moves less, and, also the moon moves more than the earth. So considering the lack of movement as ying, it is the sun the more ying, together with the fact that the sun is also yang because it is hotter. With regard to activity, there is a great nuclear activity in the sun, however, there is not life in the sun, life's activity is in the earth; so much so that through human activity earth life may reach other planets and may be other solar systems. What is stronger in expanding through the Cosmos nuclear activity or life activity? For example, the proton is yang, the electron is ying, why? Because the proton has a force to keep electrons around it? It may be so, however, electrons have a greater kinetic force than protons, what makes electrons more yang than protons.
Taoism.
If we understand Taoism as a tradition or even as a Chinese tradition it might be asserted that only those in that tradition have the authority to decide what is the natural way. However, if we understand that Taoism is the natural way, then it is doubtful that a tradition may teach it, as it is doubtful that an authority may teach the natural way, and remembering the Tao Te Ching, the Tao that can be named is not the everlasting Tao. This applies as well to become a tradition or a doctrine.
If we understand that Taoism is the natural way, then western people who are searching for the natural way may be from this view point Taoists, or may be from this same point of view that Taoists are the name Chinese give to those who search for the natural way, it may be that a Taoist is a kind of Naturist, and, it may be that a Naturist is a kind of Taoist, or it may be that there are not kinds of natural ways. People who is searching for natural remedies for diseases or searching for eating from a natural point of view may not be dependent upon a tradition or upon an official science, because it is a question of living, and traditions and official points of view are the past, the death.
So the interpretation of what is ying and yang from this point of view, may be open and not closed, and not only may be it open to a single particular change, it may be open permanently, it may be ever-changing, much as true science may be ever-changing, not being possible to keep it in a certain doctrine or law.
